Go Kale

You can write a whole book about all the amazing sides of kale/green cabbage. Green cabbage is a sturdy green leafy vegetable that is in the family with broccoli, sprouts, cauliflower and plain cabbage. The Green Cabbage has a long tradition as a healthy winter vegetables in Norway.

Green cabbage has both low energy and fat content, while it has a high content of protein, beta carotene, vitamin E, vitamin C, copper and dietary fiber. Cabbage is also a source of vitamin B6, folate, calcium and potassium. Protein contributes to growth in muscle mass. The beta caroten is converted into vitamin A in the body. Vitamin A helps to maintain normal skin and normal vision.Vitamin E helps protect the cell from oxidative stress while vitamin C strengthens the immune system and increases the absorption of iron from other foods. Dietary fiber is beneficial for digestion. Vitamin B6 contributes to normal energy, while folate helps reduce stress and fatigue. Calcium helps to maintain normal bones and teeth while potassium helps to maintain normal blood pressure.

Vitamin K in Kale is a powerful anti-inflammatory, and Kale is a remarkable source for it. Kale also contains more than 40 flavonoids, including Kaempferol and Quercetin.

The micronutrients in Kale have been shown to help reduce the risk of breast cancer and inhibit growth in women who already have it. Indole-3-carbinol helps burn estrogen in a way that is currently shown to reduce breast growth and contribute to lupus. Other recent studies have also shown that this drug in cauliflower reduces the rate of growth in existing colon cancer.
